Vegan Baking Diaries Ep. 3
Hello! I baked some more last week and I have to say, I’m pretty proud of how it turned out. All my ingredients are running out, but at least it was worth it. The first is a marble cake/loaf (think what Starbucks used to sell), and Apple Crisp! I hope you enjoy!
Vegan Marble Cake/Loaf | Total Time: 1.5 hours | Yields: 10-12 slices
Prep: preheat oven to 350 F
Ingredients:
2 1/2 of cups flour
4 1/2 tbs of corn starch
1/2 tsp of baking soda
1 tbs of baking powder
1 cup of sugar
1/4 tsp of salt
1 1/2 cups of nondairy milk (I used almond milk)
2 tsps of vanilla extract
1/3 cup of vegan butter, melted
2 tbs of apple cider vinegar (I used rice vinegar)
5 tbs of cocoa powder (chocolate batter)
5 tbs of non dairy milk (chocolate batter
Instructions:
Set out two mixing bowls. In one, combine all dry ingredients (for the vanilla batter) and mix well. Then add in all the wet ingredients and mix well. Once the vanilla batter is created, pour half of it into the other bowl. Then in that bowl, add in the cocoa powder and milk.
In a greased/sprayed baking pan, start by alternately pouring both batters in the center. Recommended at first is 2 tbs each, however I found that to be really time consuming and messy, so I just poured them in slowly. Make sure to shake the pan to evenly cover the surface with both batters. Finally, I took a tooth pick and created some aesthetically pleasing swirls on the top, just for that “marble” effect.
Bake for 1 hr or whenever the top gets golden brown. Let cool for a few minutes before eating.
Vegan Apple Crisp | Total Time: 1 hr | Yields: 10-12 pieces/squares
Prep: preheat oven to 350 F
Ingredients:
6-8 medium sized apples
2 cups of oats/packets of oatmeal
1/2 cup of brown sugar
1/4 flour
1 tsp of ground cinnamon
1/2 tsp of ground nutmeg
1/4 tsp fo salt
1 tsp of vanilla extract
3/4 cups of melted vegan butter
Instructions:
Peel and slice apples. After I took this picture I ended up cubing them to make them smaller and easier to eat. In an uncreased pan, arrange them to cover the bottom completely. Now make the topping by combining all dry ingredients in a mixing bowl, then adding the wet ingredients and mixing together.
Cover the topping over the apples completely, then bake between 40-50 minutes. Let cool completely before enjoying with vanilla ice cream! (vegan too)
